Healthy fresh ingredients does not always equate with "you can't eat just one", but this recipe can be eaten with a spoon!

A member of our gourmet group brought this greek layered appetizer to a summer gathering. The recipe originated in Minnesota, courtesy of a creative staffer from Tastefully Simple.

Easy...fresh...delish...deceptive, because the flavors are just so good together.

first things first...experiment with hummus

Try this quick and tasty hummus recipe sent to us by a couple of thirty-somethings…after a long day at work, it’s easy to whip up and very healthy, too! 

2 cans of garbanzo beans, 3 T of jalapeno pepper slices or 1 fresh Serrano or jalapeno, 1 t garlic powder, ½ t salt, 1 t freshly ground pepper, ½ t onion powder (optional-add 3 T Tahini (a paste made from sesame seeds) and 1 T olive oil to make it extra fancy and fattening…hehe!) …all into the processor…serve with carrots, cauliflower, or whatever veggies you have.

Layered Greek Dip
 

2 T water
1 T dry spinach and herb mix
1/2 t seasoned salt
3 T extra virgin olive oil
1 T vinegar
8 oz. prepared hummus
1/2 c diced seedless cucumber
1/2 c diced Roma tomato
1/4 c crumbled feta cheese
1/4 c pitted kalamata olives, quartered
2 - 3 T chopped green onions

Heat 2 tablespoons water in small microwave safe bowl for 30 seconds. Stir in Spinach & Herb Dip Mix and seasoned salt; set aside until cool. When mixture is cool, whisk in olive oil and vinegar. Spread hummus on dinner plate; top with cucumber, tomato, crumbled feta, olives and green onion. Drizzle with Spinach & Herb Dip mixture.
