Growing up in Iowa, popcorn balls were a favorite, especially around Halloween.  When the kids come home for the Christmas holidays, I have them around for snacks.  I make them small and keep them wrapped in clear plastic wrap.  I found this great recipe in a how-to book, Martha Stewart’s Christmas, 1989.

first things first

Popcorn is a sensible snack for in-between meals.  It’s low in calories and a good source of fiber.  Be creative…if you’re just making popcorn or balls…combine spices, seasonings, raisins, nuts, candy corn and/or cheeses (my favorite is Kraft’s Parmesan Style Grated Topping).  The best popcorn is cooked over the stove…3 T olive oil to 1/3 c popcorn.

Popcorn balls are great fun to make with your kids and your grandchildren. Besides eating, you could even hang some in the trees for the birds.

Pop your own corn...no microwave popcorn!
4 T unsalted butter
1-10 oz bag of marshmallows
1/4 c light brown sugar
3 qt popped popcorn
Melt the butter over low heat. Add the marshmallows and sugar. Stir until melted. Remove from the heat. Pour the marshmallow mixture over the popped corn and toss. Butter your hands and shape the corn into any size balls. Set on wax paper and then wrap in plastic wrap.
